Regians Prepare “Heavenly Sweets" at Annual Sweet Potato Bake
For the 15th consecutive year, members of the Regis community prepared over 400 pounds of sweet potatoes during the annual Sweet Potato Bake. The Regis effort, part of the Street Corner Gourmet project, provides food to be incorporated into hot dinner meals served to those in need on Thanksgiving. Regis stands as the meal's sole producer of these “Heavenly Sweets".
Over 75 volunteers—including students, parents, faculty, and staff—spent the day before Thanksgiving in the Regis cafeteria prepping dozens of trays. On Thanksgiving Day, volunteers will bake the finished trays, wrap them in blankets, and deliver to Morningside Avenue where they will complement a truly gourmet Thanksgiving feast that welcomes any and all. Over 80 blankets were also donated as part of the effort.
Regis is grateful to the many students, parents, and staff who purchased the ingredients for the recipe used during the annual bake. In addition, over $1,000 was also collected to purchase bulk items and cover the project's expenses. Photos from this year's bake are shown below.
